Oven roasted stuffed peppers
Ingredients
– 3 tablespoons olive oil
– salt and pepper to taste
– balsamic vinegar & white vinegar
– 1 tablespoon chopped mint
– 1 tablespoon oregano
– 300 g feta cheese
– 100 g cream cheese
– 4 sweet red pepper
Preheat the oven to 430ο F.
In a bowl mix the mint, oregano, feta cheese into pieces, and the cream cheese.
Cut one side of the peppers lengthwise, half of the stem, and remove the seeds to create a pocket. Wash with white vinegar. Then add the filling and transfer the peppers to a baking pan. Bake for 20 minutes or until they have softened.
Serve them drizzled with balsamic vinegar.
