Marinated anchovies on toasted bread
Ingredients
– 1 lb anchovies
– 4.5 oz salt
– 3 oz apple cider vinegar
– 4.5 oz olive oil
– 1 clove of garlic
– 0.5 teaspoon peppercorns
– 2 sprigs rosemary
Cover the bottom of a pan with a layer of coarse salt. Spread a layer of fish over it and cover with another layer of salt. Repeat the process, alternating between fish and salt until all fish are covered. Set aside for 20 minutes to marinate.
Fill a large bowl with water and wash well to remove the salt. Pat dry with paper towel.
In a bowl, add the ingredients for the marinade: vinegar, olive oil, thinly sliced garlic, lemon rinds, peppercorns and rosemary.
Mix with a spoon and add the anchovies. Cover and allow to marinate for 12 hours at room temperature.
Top with fresh herbs, lemon rinds and serve along with some freshly toasted bread.
