Stuffed zucchini flowers from Andros Island

Ingredients
– 20 Zucchini flowers
– 4 oz feta cheese
– 1 cup pecorino or kefalograviera cheese
– 2 tablespoons self-rising flour
– extra four for coating
– 2 eggs
– 3 tablespoons mint (chopped, fresh)
– Vegetable oil for deep frying
This is one of the most popular appetizers in all tavernas in Andros island. You need to wash the flowers in cold waters, trim the stems, and drain well. Beat the cheeses and flour in a bowl and stir in the beaten eggs. Add mint and pepper and stir gently.
Place a tablespoon of the cheese mixture in the center of each flower and close by gently pressing the tips of the flower together.
Heat the oil in a deep-fryer at 350-375 degrees F and coat the stuffed flowers in flour. Deep fry for about 5 minutes or until golden and place on a paper towel to drain the oil for another minute or so.
